If you want to see prophecies fulfilled, just look at Jesus. His birth by a virgin, in the city of Bethlehem was prophesied hundreds of years earlier. His death by crucifixion was foretold. The fact that none of His bones would be broken was prophesied. I can’t remember the exact number but there are numerous prophecies fulfilled by Jesus.
I'd have to look more into that. I think that it is very easy and even tempting to think that the writers of the Gospels could've wrote whatever they wanted - could've exaggerated, colored in the details, lied in some cases, all done to prop up their favorite religious figure/religion. Although, I'm reasonably open-minded enough to admit that even if details were exaggerated, that doesn't mean that an influential man named Jesus did not exist.

But I guess that's where the prophecies come in to help. If I could see something that applies today, then that would definitely be very convincing. With that said, the "signs of the time" in Matthew 24:3-31 is probably my favorite end-time prophecy because it has so many details all in one place and they are specific (could always be more specific).

Matthew 24:3-14
"3 Now as He sat on the Mount of Olives, the disciples came to Him privately, saying, “Tell us, when will these things be? And what will be the sign of Your coming, and of the end of the age?” 4 And Jesus answered and said to them: “Take heed that no one deceives you. 5 For many will come in My name, saying, ‘I am the Christ,’ and will deceive many. 6 And you will hear of wars and rumors of wars. See that you are not troubled; for [a]all these things must come to pass, but the end is not yet. 7 For nation will rise against nation, and kingdom against kingdom. And there will be famines, pestilences, and earthquakes in various places. 8 All these are the beginning of sorrows.

9 “Then they will deliver you up to tribulation and kill you, and you will be hated by all nations for My name’s sake. 10 And then many will be offended, will betray one another, and will hate one another. 11 Then many false prophets will rise up and deceive many. 12 And because lawlessness will abound, the love of many will grow cold. 13 But he who endures to the end shall be saved. 14 And this gospel of the kingdom will be preached in all the world as a witness to all the nations, and then the end will come."

I’ve heard the argument before that the Gospels were written to align with messianic prophecies. One prophecy that cannot follow that logic is the prophecy of Jesus being crucified. Psalms 22:16 For dogs have compassed me: the assembly of the wicked have inclosed me: they pierced my hands and my feet.

Crucifixion wasn’t even a form of execution when the psalm was written. It is a well documented fact that the Romans perfected crucifixion as a means of execution.

It is a matter of faith, no matter which side a person is on regarding messianic prophecies.

I think there's another problem that it has become popular to be skeptical of the Bible or there's this perception that the Bible does not fit in with reason at all.
