Interestingly, it's actually a plural noun but can be used as singular. Looking at its meaning, I see that it doesn't only refer to a deity. It can also refer to rulers, judges, and even angels. Source
But still, which meaning does Psalm 8:6 refer to? I think we can rule out it equating us to God since it doesn't call us the "Most High". But the passage does elevate the writer's status since it also doesn't equate them to men since it says you will die "like men".

We are created in the image and likeness of God. Like God, we are capable of knowing right from wrong. Man is a trinity of body, soul and spirit. God is also a trinity. Mankind is able to experience a wide range of emotions like God. Unlike other created life, humans reflect characteristics of God.I've also yet to come across an explanation for how we are created in God's image.
